Chef’s Tasting Table
Chef’s Tasting Table
A love letter to India’s forest-grown spices
An intimate evening where fire, spice, and terroir meet.
£250 per head
On the eve of Valentine’s Day, Amaya offers a one-night-only Chef’s Tasting Table in its private dining room, with just 14 seats.
The fire-led, spice-forward eight-course tasting menu is paired with exceptional Italian wines, selected to elevate every dish.
This unconventional evening is a conversation between kitchen and cellar, guided personally by Amaya’s Executive Head Chef and a Master Sommelier.
Each course, thoughtfully paced, a love letter that unfolds, chapter by chapter, unveiling the story of every spice profile and specific Italian varietals chosen to complement the complexity of each course.
Set within Amaya’s Michelin-starred dining room in Belgravia, this once off Chef’s Table offers a dining experience that blends the smoky ‘prose’ of Amaya’s innovative Indian grills with the fluid ‘poetry’ of some of Italy's best wines.
The menu celebrates the intensity and precision of the tandoor, sigri and tawa, perfected by the depth of Indian spices grown in shaded forest ecosystems, whilst harmoniously balanced by the structure of premium Italian wines. Each pairing has been chosen with intent. Expect robust, expressive wines that stand up to spice, smoke, and heat.
Guests are invited to engage, ask questions, and discover how spice and wine interact, in what promises to be an interactive, immersive evening.
From a playful burrata and bhel amuse, through rock oyster bhajia, diver-caught scallops, black pepper chicken tikka with Wayanad estate pepper, and smoked chilli lamb chops, to a deeply aromatic Nizam’s chicken biryani, the menu builds in depth and intensity before finishing with spiced red velvet dark chocolate and a final Italian dessert wine pairing.
